Edible Bird's nest
The edible bird's nest are made by the "South East Asia's swiftlets" (Collocalia species). These sparrows like birds construct their nest with glutinous strands of starched like saliva produced by a pair of large, salivary glands under their tongue. The collectors of bird's nest harvest about 5 times a year, but assure that the bird's can reproduce during the months February until July. After harvesting the nests the dust, excrements and feathers are carefully washed. After washing the nests are dried and sorted into various quality grades based on colour, size and degree of "pollution". There are 3 major categories of bird's nest colours: pink, yellow and white. The pink coloured bird's nest are the most expensive and contain the highest amount of nutrients, while the white nests are the most commonly used ones.
